Masterchef Chocolate Fondant

1. Preheat oven to 180 deg
2. Place a small square of baking paper in the bottom of 6 - 8 ramekins and grease with butter.  Coat each one with cocoa powder and set aside.
3. Melt 200g dark chocolate with 200g butter in a bowl over a saucepan of boiling water.
4. Beat 4 eggs, 4 egg yolks and 100g castor sugar until fluffy and white.  Add egg mixture to the chocolate mixture and fold, very gently.
5. Fold in 150g cake flour and mix gently until smooth.
6. Pour into ramekins and refrigerate until ready to serve.
7. When ready to serve, bake in the oven for 8-10 minutes and serve immediately.
8. You can freeze the ramekins at stage 6 and bake from frozen for 12-15minutes, or defrost and bake as above.
Absolutely awesome, quick and easy.
